Exceptional Terroir

VIV is produced from sustainably farmed vineyards in Monterey County, a prime growing region within California’s Central Coast. Our Dijon Clone Chardonnay and Pinot Noir vines thrive in this coastal climate, where the berries bask in the sun, and experience both cool morning fog and afternoon breezes from the nearby Pacific Ocean.

The large temperature swings from day to night result in a long growing season, which helps to create a wine that is more balanced and complex while retaining bright acidity and fresh fruit flavors. The rich sandy loam soils in this region provide excellent drainage, while imparting a subtle minerality and depth to the finished wine.

Winemaking

Harvested under the moonlight, the grapes are brought into the winery in the cool, early morning to preserve their quality and natural acidity. After primary fermentation, the wine goes through a secondary fermentation, producing fine bubbles and VIV’s signature sparkle.

A crucial step in our winemaking process is sur lie aging, during which the wine remains in contact with the lees for an extended time after the secondary fermentation. This technique enhances the mid-palate, and rounds out the mouthfeel of the wine.

TASTING NOTES

VIV is expertly crafted with a blend of primarily Chardonnay and Pinot Noir grapes. This classic sparkling wine combination complements each other, creating a balanced, expressive base with a complex mid-palate. Fresh and vibrant, VIV Sparkling Brut showcases elegant bubbles with notes of stone fruit, pear, lemon zest, and a hint of tangerine.
